Also, HTML email signatures aren't truly responsive and can't resize accordingly to the device size which is why a wider signature design will lose formatting when viewed on a mobile device. The Gmail app is the only app where this is a known issue. The Gmail app adds increased line height to any received HTML email signatures which is why the designs wouldn't have appeared consistent.
